Culver’s often adjusts to the needs of its local community, and the onset of the Lenten season is no different.
By special arrangement, beginning Feb. 5, Culver’s of Dixon and Rock Fall’s will be among the many Culver’s restaurants adding Northwoods walleye to its year-round staple of North Atlantic cod. For anyone with a hankering for fresh fish, the seasonal entree will be added to the menu and be available for lunch and dinner through April 1.
“It’s the best cod and walleye in town, like what you’d get at a seaside restaurant,” said Kayla Halfacre, co-owner of Culver’s in Dixon. “This is not a piece of processed fish. It’s the real deal.”
That’s not processed promotion, either. Culver’s regular supply of cod comes from the North Atlantic, and the seasonal walleye comes from Lake Winnipeg in the province of Manitoba, Canada. The fish is cleaned and fileted on the fishing boats, then “flash frozen” for shipping.
“It’s not thawed until it comes into the restaurant, to preserve the freshness,” Halfacre said. “We hand batter and deep fry it ourselves.”
Culver’s guests can have it two ways. One is a sandwich paired with classic “sides” like French fries, mashed potatoes and coleslaw. Another is as a dinner, with two or three pieces of fish and two sides.
“This time of the year, cod and walleye become more popular,” Halfacre said.
The addition of walleye as part of the regular menu is just one way Culver’s tries to “have something for everyone.”
