Soup's on: Stir up some new creations for cold, rainy days

The forecast is for some cold and rainy weather, and a hot bowl of soup is just the ticket.

I have run across some new recipes here and there that are quite tasty such as the autumn vegetable bisque.

I am also including some soups I found 3 years ago and want to share again.

The first one is a delicious wild rice and chicken soup with mushrooms that I enjoyed at my niece’s home. I asked for the recipe and she said with a laugh, “Sorry, I got it downtown at the Grape Vine,” a cafe in Paris, Ark., where she lives.

A few days later, another niece gave us a bowl of soup – this time chicken dumpling – and I got the same response. So, I set out on a mission to find out what they put in their soups.

They declined to give out the recipes, of course (and I don’t blame them). In asking around, however, I did find a wonderful recipe for a soup base, which is a good way to start any chicken soup, so I have been working with that and I have come pretty close to the taste of the Grape Vine soups.

Try some of these and add your own touch. This is another one of those areas where you can be creative.

Tip of the week

Fixing oversalted soups – If soup has been oversalted, cut up a raw potato or two and drop into the soup. The potato will absorb some of the salt. You can also add a a little sugar.
