Servers at Fiesta Cancun in Sterling start the dinner shift Tuesday afternoon. The Mexican chain restaurant at 3203 E. Lincolnway opened for business Friday.

STERLING – After about a year of promising to open soon, Fiesta Cancun finally is open.

The Mexican restaurant at 3203 E. Lincolnway, next door to Jo-Ann Fabric and Crafts, opened Friday in a site that had been vacant for 2 years.

Visitors over the weekend remarked they were pleased the restaurant finally was open and they no longer had to drive to the other locations in Dixon or Freeport, manager Martin Maldonado said.

"When I went around to the tables, and asked how the food was, how the service was, what they thought of the restaurant, everyone said it was good – good food, nice portions, good service," he said. "They said it was pretty nice."

The colorful restaurant features bright-yellow walls and carved wood panels in the windows. It's packed with carved wood chairs, tables and booths, and it's decorated with colorful Mexican blankets, sombreros and other artwork.

Fiesta Cancun serves tacos, burritos, enchiladas, fajitas and specialty dishes, such as chiles poblanos. The menu is very similar across the eight locations in Illinois and Wisconsin, but each restaurant may offer different dishes and specials from time to time, Maldonado said.

The restaurant offers a full bar, but it will not serve alcohol until its liquor license is finalized. Margaritas and other beverages should be available by next week, Maldonado said.

Reservations are not required, and carryouts are available.

The Sterling and Dixon restaurants are co-owned by Ismael "Mario" Lopez.

The Sterling site employs more than 10 people between the kitchen and wait staffs, the host and the manager.
