Peanut butter a versatile cooking ingredient

peanut-cilantro dipping sauce

Makes 1 cup (8 servings)

½ cup creamy peanut butter

6 tablespoons mild prepared salsa verde

2 tablespoons sour cream

1 tablespoon fresh lime juice

1 teaspoon granular sugar substitute

3 tablespoons chopped fresh cilantro

Combine the peanut butter, salsa verde, ¼ cup water, sour cream and sugar substitute in a blender. Process until smooth, 1 to 2 minutes. Transfer to a bowl and stir in the cilantro. Can be refrigerated up to 3 days.

Nutritional information per serving: 112 calories, 5 grams carbohydrate, 1 gram fiber, 4 grams protein, 9 grams fat, 1 gram saturated fat, 98 milligrams sodium.
