Have some fun with taco shells

I have some fun, easy food for you today. Fun to eat, fun to make. Everybody likes fun foods! Somehow it is more fun if we fill a hot dog bun with a banana and peanut butter instead of a wiener and mustard. That’s what I’m talking about.

It will be no surprise, then, if we dress up a taco and call it a BLT taco. I love to eat anything in a fried taco shell, as you know. We have had chicken tacos, chili tacos, cheese tacos, meat tacos, fish tacos, and walking tacos. I loved them all!

I was not even thinking about tacos when this idea just came to me. You know how some great music composers say a song “just came to me.” That was what happened. I was looking in the refrigerator for something quick for supper and I spotted a package of bacon. Right away, I thought of bacon, lettuce and tomato, one of my favorite sandwiches.

But the tortillas were there, right behind the bacon. It just popped into my head: Why not BLT tacos? So I made one, and ate it. Then I made another and ate that. This is one of the best tacos I have ever made, so I decided to share it with you.

Actually, it should be called a BTS taco, because I used fresh spinach, instead of lettuce, as I do now in everything I cook. I use fresh spinach in any recipe that calls for lettuce. I can just feel those deep green leaves making me healthy.

It was easy to get distracted by the performance of it all. The active shooter drill held by Sterling and County Police last week at the high school. The scenario; two armed shooters in the school killing students and teachers and the police and medical technician's response. It's an unfortunate drill, but a necessary one.
