Column: An earful on the goodness of corn
It truly felt like summer when we sat down to dinner and enjoyed our first sweet corn of the season. My husband has been on the edge of his seat waiting for the sweet corn to reach maturity this summer. My dad made our day when he carried in the bags of freshly picked sweet corn.
This time of year is when I usually begin fielding questions about the nutritional characteristics of sweet corn. Often I hear that corn is high is sugar and fat, has little nutritional value, and is a starchy vegetable, so we shouldn’t eat it.
Let me clear up some confusion about corn, it’s nutritional status and why it is not only the most entertaining vegetable to watch people eat, but is healthy as well.
