Cobblestone coming to Dixon

DIXON – Josh Burkhalter has listened to all the Dixonites who've come into his Sterling ice cream shop and deli: Cobblestone Ice Cream is coming to Dixon.

Burkhalter iis opening an ice cream stand there – Saturday, he hopes.

The stand, under a tent at 113 N. Galena Ave., likely will be open from 4 p.m. to 9 p.m. every day until the weather turns, but nothing is set in cobblestone.

"It's kind of a market test," Burkhalter said.

He will serve 16 flavors, in cake cones, waffle cones and dishes.

Expansion plans are in the works. "We have every intention of opening a deli," he said.

Opening a Dixon location is something Burkhalter and his wife, Alison Burkhalter, who live there, have wanted to do for a while, he said.

"There's so much Dixon traffic in our Sterling store," he said.
