Grace prepares chicken cordon bleu in 30 minutes

This week’s featured recipe is for chicken cordon bleu. It is easy, quick, and I love it. My family and friends love it too. It makes a great meal for company or for family. It can go from refrigerator to table in a half-hour.

Chicken cordon bleu first appeared as pieces of chicken, filled with cheese and ham, and then fried in breadcrumbs. It became a menu favorite at nice restaurants. Then, like so many other great meals, creative cooks found they could duplicate, or even improve on chicken cordon bleu, in their own kitchen.

This cordon bleu is baked in the oven, making it a lot healthier than the fried version, and much easier. I tried the recipe this week and it was every bit as good as the coated and fried version. This is definitely a “company supper,” fit for a king.
